PEANUT BUTTER CUP ENERGY BITES

These small but mighty peanut butter bites give you the perfect boost of energy, whether you’re after a mid-afternoon pick-me-up or something to snack on before you work out. They are easy to make with just five nutrient packed ingredients: dates, peanut butter, dark chocolate, chia seeds and oats. Dates are naturally sweet and high in fiber and antioxidants that assist in fighting disease and inflammation, while peanuts are a great source of healthy fats, protein, and B vitamins. Dark chocolate in small doses is a powerful source of antioxidants too. Read on for how to make this tasty guilt-free snack.
Ingredients:
1 cup of dates
3 tbsp all-natural salted peanut or almond butter
1/4 cup dairy-free dark chocolate
1 tbsp chia seeds (or sub flax or hemp seeds)
2/3 cup gluten-free rolled oats
Method:
Add the dates to a food processor or blender until they’re in small pieces and then add the oats, chocolate, chia seeds and peanut butter and mix until combined. Roll your mixture into one inch size balls using the warmth of your hands to mold them together. Pop them in the fridge or freezer for 15 minutes to set and enjoy!
